On Saturday mornings I like to go for a walk or bicycle ride around my neighborhood, Cooper-Young. This morning after gleaning some figs from a few neighbors trees with my son, Charlie, we stopped by the Cooper-Young farmers' market to visit with my friend, Chris Peterson of Loch Holland Farm to buy some fresh duck and chicken eggs. Charlie loves tomatoes, so he easily talked me into buying some at the neighboring stall, where the growers from Tubby Creek also had fresh honey.
On the way home, I clipped some basil, just thinking about this simple recipe that everyone in our family loves to eat with ripe tomatoes during the summer. Easy Tomato Pasta Ingredients: 5-10 cloves garlic 3-5 large ripe tomatoes (about a pound) 1 pound pasta 12-40 leaves of basil (depending on your taste) Good quality Extra Virgin Olive Oil Salt to taste 1) Place a pot of water on the stove to boil. 2) Peel the garlic and place it on a skewer. Once the water comes to a boil, place the skewered garlic in the water. Allow the garlic to cook in the water for about two minutes, then remove to a cutting board and chop finely. Place the garlic in a large bowl. 3) Remove the core of each tomato, then score an "X" on the opposite side (this will allow you to easily peel the skins of the tomatoes after a brief soak in the boiling water). Gently place the tomatoes in the water, and allow to cook for about 90 seconds. Remove with a slotted spoon, and place on a cutting board. Allow the tomatoes to cool slightly. 4) While the tomatoes are cooling... salt the boiling water liberally. (Italians believe pasta water should be as salty as the Mediterranean!) Cook the pasta until it is JUST done. This is usually less time than is written on the package. When the pasta is finished, remove to a colander and allow to drain. 5) While the pasta is cooking, peel the skin off of the tomatoes and cut them into chunks. Place tomato chunks and their juice in the bowl with the garlic. 6) Chop the basil finely. 7) When the pasta is drained, pour it into the bowl with the tomatoes and garlic. 8) Pour about 1/4 cup olive oil over the mixture, and stir to combine. 9) Mix in desired amount of basil, and salt to taste. 10) Pasta and sauce is best served in bowls with spoons to slurp up the delicious juice.
